Q: What is kombucha?
Kombucha is a healthy, fermented probiotic drink made from tea, sugar and the kombucha mother culture, aka the SCOBY, or Symbiotic Community of Bacteria and Yeast.
Q: How do you make it?
Earthling Kombucha has only 4 ingredients: Organic Taiwan black tea, organic cane sugar, our kombucha mother culture (SCOBY), and lots and lots of love! While sugar is a primary ingredient, most of it is consumed during the fermentation process by the SCOBY. It takes anywhere between one to several weeks for the SCOBY to do its work and transform the original ingredients into delicious kombucha.
Q: What does it taste like?
Probably like nothing you’ve ever had before! It’s naturally bubbly, lightly sweet, slightly tart, and a little bit sour. It’s like a party for your mouth and stomach. It will definitely wake you up!
Q: Where does it come from?
The history of kombucha is a bit of a mystery. Some say its origins date back to ancient China. The name is definitely Japanese. It’s also been popular in Russia since at least the 19th Century. In truth, because it is fermented sweet tea, it has likely arisen independently in all of those places and more, anywhere people drink tea!
Regardless of its origin, the important thing is that it’s now available in Taiwan!
Q: How long does kombucha last in the fridge?
You can keep Earthling Kombucha in the fridge for up to 9 weeks. Our kombucha is raw (unpasteurized) so it will continue fermenting in the fridge, although very, very slowly. With time, it may even taste better, with richer, more complex flavors. Kombucha will not “spoil” even after the recommended 9 weeks, but it might just become too sour for some palettes. If that happens, you can dilute it with water or other fruit juices to taste.
Q: Do I have to refrigerate it?
Yes! We highly recommend it. Since it is raw, the kombucha will continue to ferment at room temperature. If your bottle is sealed, there is the possibility that so much gas could build up in the bottle that it explodes! We recommend you to put them in the fridge as soon as possible.

Kombucha is a functional beverage. It has benefits above and beyond just tasting good. There are all kinds of good vitamins and minerals produced during the fermentation process, including:

Q: Does kombucha have caffeine?
Yes, kombucha contains caffeine from the black tea. However, some of that is consumed in the fermentation process, so the final product has less than half of the original amount of caffeine as a regular cup of black tea.
Q: What about alcohol?
During fermentation, yeast eats sugar and makes alcohol! So yes, there is a little bit of naturally occurring alcohol as a result of the fermentation process, generally less than 0.5%. Young children, pregnant women and alcohol intolerant individuals should take this into consideration.
Q: What are those weird brown things floating in my brew?
Don’t be afraid! The brown strands are colonies of yeast. They are not only harmless, they’re good for you! You may also find a thin, clear, slimy baby SCOBY floating in your kombucha. If so, it is your lucky day because that baby is good for you. Drink it up!
